Equal parts Myer's Dark Rum, any coconut rum, orange juice, pineapple juice. Use a lot of ice, this needs a little dilution.

Into a standard blender pour the following:
- a splash of Rose's Caribbean lime juice
- a light splash of Grenadine; not too much, makes it too sweet.
- add ice to within an inch of the top of the jar
Spin it into a slurry, makes 3-4 servings. Add just a dash of 151 to the top.

1/2 OZ AMERETTO
1/2 OZ MIDORI MELON LIQUER
1 DROP OF LIME
SHAKE AND POUR OVER ICE
It'll Do's Cooler
1 (10oz) jar maraschino cherries undrained
1 (12oz) can frozen limeaide concentrate, thawed
1 (12oz) can frozen orange juice concentrate, thawed
1 (12oz) can frozen pink lemonade concentrate, thawed
2 cups any rum your preference I just use what I have in stock
6 cups club soda - if you need it sweeter use gingerale
Process cherries and limeaide in blender until smooth, stopping once to scrape down sides. Pour mixture into large container. Stir in remaining ingredients; cover and freeze up to 8 hours stirring occasionally. Let stand at room temp for a bit to allow to get to slushy stage. Makes 3 quartz
Mermaid on the Rocks

3 parts orange juice
6 parts cranberry juice
4 parts Bacardi Gold
2 parts Nassau Royal
1 part fresh lemon or lime juice
Shake or stir
Pour over rocks
Put on your flippers and enjoy! It's a littel tart.
Mojitos

In a martini shaker, take some sugar (preferably the raw Hawaiian kind) fresh mint leaves and some fresh lime juice. Smoosh it all together for a minute or 2 to release the flavors. Add your favorite white rum and a few ice cubes and shake. In a highball glass, add more ice and add the strained, rum mixture. Fill the rest of the glass with some club soda and add a fresh mint sprig for garnish. So refreshing!
Painkiller

2 ounces dark rum
4 ounces unsweetened pineapple juice
1 ounce orange juice
1 ounce Coco Lopez
Shake with ice.
Strain into an ice filled glass
Garnish with ground nutmeg, cinnamon, pineapple stick, and orange wheel.

Danielle's Eggnog

1 dozen eggs
1.5 fifths rum
1 lb. sugar (2.25 cups)
1 quart milk
6 1/2 pints of whipping crean (3 pints)
Separate eggs, and save whites in fridge.
Beat yolks with the sugar thoroughly.
Add rum and stir.
Put mixture in fridge to settle and to let go of egg flavor.
Beat egg whites until fluffy.
Beat cream until fluffy.
Carefully stir cream and whites into the mixture.
Chill at least 3 hours.
Mix thoroughly before serving, and sprinkle with nutmeg.
Michael Harris Eggnog (Michael is a Canadian author)

3 cups whole milk
7 large eggs
1 cup sugar
2 cups heavy cream
1/3 cup rum, preferably dark
1/3 cup brandy
1 teaspoon vanilla
freshly ground nutmeg
Take the milk, and bring to a boil in a saucepan.
Take the eggs and 1 cup of sugar and put in a large bowl. Mix, and add in the hot milk SLOWLY, whisking it, adding as slowly as when you add oil into eggs when making mayonnaise.
Cook on moderate heat, stirring constantly.
With an instant thermometer, bring to 170F, or cook about 6-7 minutes, until it is like a custard consistency.
Take the custard and push it through a fine sieve.
Pour into a large bowl, stir in cream, rum, brandy and vanilla.
Cool - bowl uncovered. Then cover and chill until cold.
You can drink it in three hours, but it is even better if you drink it the next day so the flavours can mellow.
Watermelon Margarita

2 1/2 cups watermelon (seedless, if possible) cut into 1 inch cubes
3 tablespoons fresh squeezed lime juice
4 oz tequila
2 oz orange flavored liquor
1 1/2 cups ice
Put watermelon in the freezer for a couple of hours. Put all ingredients in blender and puree till smooth. Rub rim of margarita glasses with wedge of lime and dip into salt and garnish with lime wedge.....ENJOY !!
If you do not have enough time to freeze the watermelon, use more ice. You can double up and make a pitcher and keep the pitcher in the freezer. These got us through Hurricane Francis and Jeanne a few years back!

Make a double strength pitcher of Crystal Light lemondade. (Two quarts water with 2 packages), 6 -8 oz. vodka, half that amount of Triple sec, tons of ice. Shake, pour, keep pitcher in fridge. Each martini will be really cold and continue to get diluted with the ice. And the Crystal is sugar free and only has 5 cal. per serving.

It's called a Conch Pearl, and you can only get it in Hopetown, Bahamas at a place called Abaco Inn! 8 oz. Amaretto, 6 oz. Cream De Co Co Liquor, 3-4oz. Bacardi Rum; Pour above into shaker and leave on counter. When ready to make a drink, pour 3 oz. of the mix into a blender over a little ice and add a little Coco Lopez and very little evaporated milk. Blend until creamy, then pour into a glass and add a splash of grenadine for color (I like more than a splash because it sweetens it) Then serve!
